Module Description: An overview of hospitality operations, hospitality systems, and structure of the hospitality industry. Introducing the student to operations control practices, queuing and waiting systems as well as service quality, customer care & guest satisfaction. Sustainable operations management in an ever-changing work environment meeting the needs of evolving operational and customer opportunities, threats, challenges and trends.

On successful completion of this module the learner will be able to:

The small hotel. Hotel groups. International hotel operations. Organisation structure. Department roles and responsibilities. Interdepartmental organizational activities.
Components of the Tourism Industry
Five 5 A's of Tourism, Source products and markets, Key tourism Statistics, Representative bodies in the tourism sector.
Hospitality operations control management
Control process. financial and non-financial controls. SOP's. Retention and staff turnover. Key sustainable hospitality operations work practices.
Operations Management Theory and Practice
Introduction, distinctive features of the hospitality industry, services versus manufacturing operations, hospitality systems.
Customer care and guest satisfaction practices.
Customer care and guest satisfaction theory and practice. Staff engagement as key to success. Employee skills required for successful performance. Service failure/recovery. Changing customer demands and habits and the key influences in dealing with these changes successfully. opportunities, challenges, threats and trends including sustainable practices, technological developments, SMART technology, greening concepts, and differentiating the hospitality product.
