Module Description: This module explains the technical and microbiological bases of the processing of foods and the protection of the environment.
 
Learning Outcomes
On successful completion of this module the learner will be able to:

LO1 Describe the concept diet and health over the human life cycle and discuss diseases and conditions caused, aggravated or alleviated by food consumption patterns.
LO2 Discuss the compliance at farm level with regulatory and legislative requirements in farm safety, food safety, environmental protection and animal welfare.
LO3 Perform investigations and demonstrations of the role of micro-organisms in the environment, in human and animal health and in the production, preservation and spoilage of foods.
LO4 Generate and analyse data and documents to assess and verify compliance with regulatory requirements

Indicative Content
Microbiology.
Types and classes of micro-organisms. The importance of micro-organisms in the environment, in human and animal health and disease, in food spoilage and in food processing.
Nutrition, health and disease.
Human nutrition at all stages of life. Diseases caused or alleviated by food consumption. Food consumption trends. Responding at farm level to food market forces.
Legislation and Regulation of the Food and Environment Sectors.
Need for regulation and compliance. European, National and Local Regulation. Compliance and Enforcement. Compliance Costs and Benefits. Voluntary schemes. Supermarket and other customer inspections. Organic, Origin Green and Carbon footprint Schemes.
Farming safely and responsibly.
Regulatory requirements in Farm Safety, Traceability, Food Safety, Animal Welfare and Environmental Protection. Compliance with requirements. Auditing and verification of compliance.
